The authors concluded that there is "an inverse association between increasing consumption of leafy vegetables and olive oil and CHD risk."

The result of a study published in the journal BMC Genomics demonstrated the effect of olive oil on white blood cells that mount an inflammatory response when potential invaders are detected.
