powder from a reliable source. Cayenne powders are rated according to their heat potential with Scofield Heat Units (SCUs), usually at 40,000, 60,000, and 90,000 SCUs. If you're new to this, start at 40,000 SCUs. For maximum effectiveness, less than 40,000 SCUs should be avoided.
