Alternatives to frying fish in unhealthy oil

Some flavorful and more creative -- as well as healthier -- alternatives to frying your favorite fish in unhealthy oils include cooking fish in foil with lots of vegetables or cooking salmon on a cedar shingle for a smoky flavor.



If there is one thing I like almost as much as fishing, it's cooking and eating my catch. Rolling a filet in eggs, flour and other spices and then dropping it into a pot of boiling oil was always my favorite. I also enjoyed making a walleye quiche with lots of cheese, but with age I've discovered that you just can't hide from the effects of all that fat and oils. Now I find myself looking for healthier ways to get the same flavor. Coming from Alaska, I brought back some salmon and halibut and over the past several months, I've been experimenting with different ways of preparing them that are both healthy and tasty. My boss, Don Mrachek recommended that I try cooking a salmon filet on a shingle so I made a trip to the lumber yard, picked up some cedar boards and gave it a try. I had it all ready and called my wife when I was almost ready to come home. Then I got held up and got home late so I suspected that the fish would be just a little over cooked. Walleye is another story, but I've been taking filets, cutting a lot of vegetables like peppers, onions, fresh beans and carrots and wrapping them in tin foil with just a little light butter and putting them on the barbecue for 10 to 15 minutes. The salmon and halibut I brought back still had the skin on it and when you cook it, that seems to hold in some of the moisture. I'm not sure if it would have the same effect with walleye, but my next catch will have the skin on it and we'll see if it keeps the fish from drying out.
