by Mike Adams, the Health Ranger, NaturalNews Editor

Vegetable sprouts, rich in vitamins, minerals and enzymes, are gaining popularity as a health food, and do-it-yourself kits are now available help people grow their own sprouts at home.

Vegetable sprouts have long been a staple of vegetarian diets, and with a well-being fad sweeping the nation, they have started to appeal to much bigger market. Now there are do-it-yourself kits available for the heath-conscious to grow their own sprouts. Sprouts are known for their nutritious value because they contain plentiful nutrients needed to push the growth of the plant. Seeds or grains mainly consist of protein, fat and small amounts of minerals. But once they sprout, the protein turns into amino acids and the fat into essential fatty acids, while the minerals such as calcium, phosphorus, and iron also increase. Within six or seven days of sprouting, they are about 10-20 richer in vitamin and minerals than adult vegetables, and five to 10 days after germination they are still rich in enzymes, mineral and vitamins. Bean sprouts, once the humble staple of working people, have become a popular health food. As the sprouts grow, the level of healthful nutrients, including vitamin C, thiamine (vitamin B1), riboflavin (vitamin B2), and aspartic acid, a kind of amino acid, goes up. But the vitamins in bean sprouts start to disappear seven days after budding, so they should be eaten by then. Kim Jeong-hee is a 43-year-old housewife in Sincheon, where she grows her own vegetable sprouts and serves up food strictly in accordance with the well-being trend. Radish and beans, rape germ, mustard germ and spring onion are the most popular sprout vegetables. Containers for growing sprout vegetables cost as little as W10,000 (US$10) to W30,000. Interpark, an online shopping mall, sells a containers for W17,900, including seeds of beans, broccoli, red radish, radish, red cabbage, rape, flax and Chinese cabbage.
