Steven Pratt, a nutrition expert and ophthalmologist in La Jolla, Calif., and author Kathy Matthews have dubbed 14 vitamin- and nutrient-packed foods "SuperFoods," in their 2004 book "SuperFoods RX: Fourteen Foods That Will Change Your Life" (William Morrow, $24.95). Pinto beans, navy beans, Great Northerns, lima, garbanzo, lentils, green beans, and sugar snap peas are all low-fat and high in fiber and protein and great sources of B vitamins, folate, potassium, iron and magnesium. They're a good source of fiber, vitamins C and E, potassium, magnesium, iron and niacin, and they're also low in calories. Packed with nutrients such as vitamins C and K, beta-carotene, folate and even calcium, this high-fiber low-calorie vegetable is perfect for stir-frys and tastes great raw with a tiny bit of low-calorie salad dressing. We all know oranges are a great source of vitamin C. This pink fish is packed with B vitamins, Omega-3 fatty acids that keep cholesterol and hypertension in check, vitamin D, potassium and protein. It's not so easy to pack for lunch, but you can fix a cool salmon salad or look for it (grilled or poached) on the menu at a restaurant. If you haven't given tofu or soy milk a chance lately, do it. Spinach is packed with vitamins -- tons of B as well as C and E, minerals and plant-derived Omega-3 fatty acids. Lycopene, a powerful antioxidant in red foods such as tomatoes, helps make the tomato so nutritious. It's easy to use tomatoes in all types of sauces and soups, or to pack the relatively new variety of bite-sized sweet grape tomatoes in a lunchbox for a perfect sweet snack. Yogurt is packed with protein, B vitamins, calcium, potassium and zinc.
