New Jersey school district working to get more healthy greens in students' diets

A diet rich in green vegetables can help reduce cancer rates by 50 percent, but Americans have a hard time cooking and eating greens. Some nutritionists think it’s best to start early. One school district in southern New Jersey is working with its food vendors to work as many greens into kids’ diets as possible. Especially popular are raw broccoli spears served with low-fat dip, celery sticks with peanut butter or ranch dressings, tossed salads served in “shaker” cups, and cabbage with bow-tie pasta.
