An Arizona woman who helped usher in America's carb-counting craze is closing up shop. The owner of the 11-store Low Carb Mall chain says the fad has been taken over by corporate giants, and her four-year-old company just cannot compete. Among her issues: one of her store's leases says she cannot compete directly with her neighbor, 7-11. That's a problem, now that the national chain has gone low-carb itself in many ways.
