Bad science says using chopsticks causes arthritis

In reality, it's the lack of daily hand and wrist flexibility exercises that promotes arthritis. It has nothing to do with using chopsticks. The same conclusion could be reached from people using forks with the same repetitive grasp. It is the lack of joint flexibility that's the cause here, not a stick of wood. Talk about bad science...

U.S. researchers reported on Friday.
- A study of more than 2,500 residents of Beijing found that
osteoarthritis was more common in the hands used to operate chopsticks
-- and in the fingers specifically stressed by chopstick use.
- Dr. David Hunter of the Boston University School of Medicine and
colleagues interviewed 2,507 60-year-old residents in randomly selected
Beijing neighborhoods.
- Hunter noted that other studies have shown that using the hands
repetitively can stress the joints and cause arthritis.
