New "Juice Feasting" Emerging as Phytonutrient-Rich Disease-Fighting Nutritional System

Some might call it a raw foods diet, or a raw food vegan diet. I think those terms can freak people out. I don't consider myself a vegan, since I sometimes eat cooked fish. And I don't consider myself a full-time raw foodist, since I eat one cooked meal a day. But I believe whole-heartedly in the benefits of raw, living foods, and I totally support the philosophy and practice of veganism. But there are healthy vegans and then there are junk food vegans. I've seen people guzzling soda and eating chips, then calling themselves "vegans." Are you kidding me? Forget the labels.

People on a balanced vegan diet rarely suffer from a chronic illness. A recent study showed that a vegan diet may even reverse diabetes. In addition, it is a myth that vegans are more prone to anemia owing to a deficiency in vitamin B12 than meat-eaters. In fact, I see far more anemic meat-eaters than vegetarians who are anemic. I personally suffered years of childhood anemia while on animal proteins, but completely recovered from it after eight weeks on a vegan diet (with the exception of butter).

I grew up on a farm, and I milked the cows, and I never did care for milk. I don't particularly care for eggs either." "For quite a few years, I read the concerns about vegans not getting enough vitamin B)2 or protein or calcium; you know how it goes," he said. "They said even the amino acids in vegetables were not adequate. But we began to find out that much of these were old wives' tales.

Rather than thinking in terms of vegetarian or vegan, let me introduce the term vegephile: "one who likes to eat vegetables." Contrast pasta and grain-etarians to raw foodists, whose members include Sting, Woody Harrelson, and supermodel Carol Alt. Raw foodists, most of whom are vegans, don't consume cooked grains or beans and generally have vibrant health for a surprising reason you'll learn about in Phase 3. More on that later, but for now, remember: the more vegetables you eat, the better your health.

You can certainly survive on a vegetarian and even a vegan diet, and there may be compelling ethical reasons to avoid animal products. However, during my fifteen-year stint as a professor at a medical school that espouses vegetarianism, I encountered very few long-term vegetarians and vegans who were in thriving good health. This is largely because the eating habits of most vegetarians in this country make them pasta and grain dependent. They might be more appropriately called "grain-etarians.

In my bio on the ActivistCash Web site, CCF claims that I "attack all foods that don't fit [my] vegan agenda."13 Actually, I don't have a vegan agenda, nor is it my goal to get everyone to eat the way I choose to. Naturally, the fact that I personally happen to eat a mostly vegan (devoid of animal products) diet does influence my advocacy work. I also think a diet that resembles my own would be optimal for most people. Does that mean that I have some secret plan to change everyone's eating habits to precisely match mine? Absolutely not.

Where the Vegans Have It Wrong Speaking of protein, I'm always amused by the vegan propaganda about how animal protein "causes" bone loss and osteoporosis. Actually, the opposite is true. The Framingham Osteoporosis Study investigated protein consumption over a four-year period among 615 elderly men and women with an average age of 75. The amount of protein eaten daily ranged from as low as 14 g a day to as high as 175 g. Those who consumed more protein had less bone loss, and those who consumed less protein had more bone loss, both at the femoral bone and at the spine.

Before I started eating purely vegan 35 years ago, I suffered from a severe chronic anemia. It vanished two months after I stopped eating meat, poultry, eggs, fish, cheese and milk. If the body for any reason required more of this vitamin, it would instinctively desire foods (versus craving them) that would meet the increased demand. However, if the liver and intestines are congested, a B12 deficiency may eventually develop, regardless of whether a person is a meat-eater, a vegetarian, or vegan.

One of the best ways to achieve a high-fiber and low-fat diet is the vegan diet. This is a vegetarian diet in which absolutely no animal products are consumed. Strict vegan diets, which are typically very low in saturated fat and dietary cholesterol and high in fiber, can help maintain or achieve desirable blood levels by especially lowering the total cholesterol and the LDL cholesterol.99 Specific fruits or vegetables may also have a particular positive effecr on serum lipids. Raw carrots may have a more potent effect on lowering cholesterol than do oat products.

This is confirmed by several studies. For example, twinning rates in 15 European countries correlated with average milk consumption.34 The rate of twins in some countries also dropped when dairy consumption fell during World War II.

As testament to the food allergy theory of asthma, research indicates that a vegan diet helps relieve asthma symptoms. In a research study of 25 asthma patients, 71 percent of those who went vegan—no dairy products, milk, eggs, meat, or fish—experienced a significant improvement in asthma symptoms after only four months, with that number hitting 92 percent after a year. Experts say that vegan diets help asthma patients simply because they eliminate common food allergens like milk products and eggs.

Indeed, "vegan" doesn't even accurately describe my position. Rather, I promote a whole foods, plant-based diet; there are plenty of vegan foods that don't fit that "agenda." But of course, CCF's smear rhetoric prefers to pass over a term like whole foods. The loaded word vegan is much better suited to its tar and feathering purposes, given its association, in some circles, with extremism and radical-fringe "lunacy" (thanks in large part to the hard work of CCF's well-oiled PR machine and others like it). CCF maintains a long hit parade of food cops operating under supposed "hidden agendas.

Once your taste for meat or other animal proteins begins to diminish, you can gradually switch to a balanced vegan diet. Over two-thirds of the world's population are still vegetarian (they eat some dairy) or vegan (they eat nothing from animals) and, therefore, they consume little or no animal protein. These population groups show almost no signs of such degenerative illnesses as heart disease, cancer, osteoporosis, arthritis, diabetes, obesity, MS, and the like.

By consuming a healthful diet based on an organic, partially raw / vegan diet with nutritional supplementation, a fair amount of physical exercise, and minimal animal products, I've achieved LDL cholesterol of 67, HDL cholesterol of 62 and a resting pulse of 48. These numbers are not unattainable, even though they are astonishing to many doctors. They should not be considered unusual, either, because these numbers represent a level of health that all human beings are capable of achieving if they just stop poisoning their bodies with unhealthy foods, beverages and prescription drugs.

In Phase 1, the object of the game is to include an animal-based source of protein (if you're not a vegetarian or vegan) as part of your salad. As you move to Phases 2 and 3, the proportions of animal-based protein to vegetables will shift significantly in favor of vegetables. Your simplest option is a salad topped with grilled chicken or shrimp. All these salads are equally suitable as a side dish or first course at dinner. Most of the salad recipes can easily be adapted to serve as a complete lunch or dinner. (Look for "Make It a Meal" in several of the salad and other recipes that follow.

The problem with the vegan diet is that vegetables do not supply all the essential amino acids needed for healing and immune function. It is important that vegetarians and vegans eat a wide variety of fruits and vegetables to get as many of the essential amino acids as possible. Many are gulping down amino acid concoctions to replace these lost amino acids, but I discourage this practice since most are high in free glutamic acid, which can produce the same damage as MSG.
