Oat bran decreased the level of total cholesterol in the blood even more—by 19 percent in the lard diet and by 22 percent in the sunflower oil diet-and in the liver by 22 percent and 27 percent, respectively. Plus, neither amaranth nor oat bran caused a lowering of the rats' beneficial HDL cholesterol. In the diets in which amaranth or oat bran was given with sunflower oil, the rats' blood levels of triglycerides also dropped precipitously— by 22 percent! But when amaranth or oat bran was combined with lard, such beneficial effects occurred only in the liver, not in the blood.
