Many fish and Brazil nuts also have selenium. It seems that taking 200 micrograms of selenium in organic supplements may help reduce your cancer risk if you live in a selenium-poor area of the country (most areas are depleted of selenium). Don't exceed 600 micrograms a day.

If so, it may be a sign of selenium toxicity (aka selenosis). While an important antioxidant, selenium should not be taken in very large doses. In addition to supplements, it's found in nuts (especially Brazil nuts), meat, seafood, and—not surprisingly—garlic. But you'd be hard pressed to eat so much garlic—or any other selenium-containing food—to cause this problem. Tooth discoloration and decay, skin discoloration, hair loss, nail prob-

Helpful: If you are at an increased risk of cancer (due to family history, exposure to secondhand smoke or other carcinogens), consider taking a 50- to 200-microgram (meg) selenium supplement.
Important: If you are currently undergoing treatment for cancer, talk to your doctor before taking selenium.

It is an essential ingredient in your body's antioxidant system. selenium has been the subject of intense study for its anti-cancer, immune-boosting, heart-protective effects. Your multivitamin should offer adequate selenium to replace this mineral.

Consider the example of the trace mineral selenium, which is present in nuts (particularly Brazil nuts) and yeast. The RDA of selenium was established by taking ten male college students, measuring the selenium content of their diet, and determining that they weren't ill. Unfortunately, the serum level of selenium in the blood of the average American is dramatically lower than that of the average French person, who incidentally has a much lower risk of diabetes and insulin resistance. |

Selenium selenium works with vitamin E as an antioxidant. It promotes healthy muscles, and is an essential element for healthy skin and coat. selenium deficiencies may result in weight loss, poor skin and coat condition, and tooth decay. Natural sources of selenium are liver, milk, tuna, egg yolks, mushrooms, wheat germ, bran, whole grain cereals, chicken, and garlic.
Sodium Pets usually receive an adequate amount of salt through their diet and therefore adding salt is seldom necessary. Sodium regulates the fluid balance in the body and it is extremely important in maintaining blood pressure. |

Selenium: selenium is an antioxidant mineral responsible for tissue elasticity. It also acts to prevent cell damage by free radicals and is will known to be correlated with a reduction of breast cancer risk. It may play an important role in preventing skin cancer, as it can protect the skin from damage from excessive ultraviolet light.
Dietary sources of selenium include wheat germ, seafood such as tuna and salmon, garlic, Brazil nuts, eggs, brown rice, and whole-wheat bread. |

The point of this is that, when we read in a book that Kale is a great source of calcium, or that broccoli is a good source of selenium, we really have to imagine an asterisk behind that statement. Kale may be a good source of calcium if there was calcium present in the soil in which it was grown. Broccoli may be a good source of selenium, but only if selenium was present in the soil.

The minerals zinc, copper, and selenium are necessary for normal hormone production in men. In one study, a group of patients was given 1.4 mg of zinc daily while a second group received 10.4 mg per day. While blood levels of zinc did not vary between the groups, the low-zinc group had significantly lower levels of testosterone.17 selenium, in addition to being required for testosterone production, helps protect the male sex glands against free radicals and heavy metals.18 If these minerals are lacking in the diet, hormone imbalances may occur. |

Mercury is toxic only in the absence of selenium, an essential dietary mineral. If you take selenium supplements or get 200 meg of it in a multivitamin-multimineral supplement, it should protect you. If you eat seafood judiciously, and you can do so two to four times weekly, the benefits outweigh the risks. Pregnant women and small children, however, should still avoid high-mercury seafood.
Other high-mercury seafood includes Atlantic halibut, king mackerel, Gulf Coast oysters, pike, sea bass, shark, swordfish, tilefish (golden snapper), tuna steaks, and canned albacore. |

Selenium occurs in cereals and nuts and in vegetables grown in selenium-rich soils. selenium is important in various enzymes and is part of the body's defence system. The upper safe limit in supplementation is set at 200 pg. Zinc has numerous functions in several enzyme systems. It is abundant in animal foods but also occurs in cereals and pulses. Both the RDA and suggested upper safe limit is 15 mg. Chromium is important in the metabolism of glucose, amino acids and fats. Plant food sources include nuts, pulses and wholegrain cereals. |
