Peanuts Help to Control Blood Sugar
Small amounts of peanuts have virtually no impact on blood-sugar levels—and they may reduce postmeal increases in blood sugar.
In another experiment, Carol S. Johnston, Ph.D., fed eleven healthy people meals that were high in either sugar and carbs or protein. For some of the meals, 25 grams of peanut butter or roasted peanuts (about 1 ounce) were substituted for butter. When the peanuts were added to the high-sugar, high-carb meal, the postmeal rise in blood sugar was cut in half. |

If legumes are eaten, the best legumes are chickpeas and peanuts (wild Amazonian peanuts, the only peanuts ever to test free of aflatoxin, are now available at www.rawfood.com). Chickpeas should be sprouted. peanuts may be soaked until plump before eating, although they are nice in their dried state as well. Both chickpeas and peanuts have a higher ratio of fat to protein than other legumes, but chickpeas are still protein-dominant. Some infant milk preparations contain vegetable oil derived from peanuts, and an article in the Lancet of 29 May 1993 suggested this is possibly responsible for the increased incidence among children of an allergic sensitivity to peanuts.

For example, a cup of peanuts contains nearly 1,000 calories (a very high caloric-density food) whereas a cup of chopped apple contains only 60 calories (a very low caloric-density food). Blend in peanuts and coat evenly. Spread evenly on a greased or papered baking sheet. Roast nut mixture at 350 degrees for .4 minutes. Take out of oven and stir and coat evenly again. Aflatoxin is a group of toxins produced by certain
Aspergillus molds that can contaminate peanuts, other nuts, grains, and corn stored in warm, humid environments. After being consumed in the contaminated food, these toxins are oxidized in the liver, which can cause specific genetic mutations that are highly correlated to the risk of liver cancer. In fact, in areas of the world with prevalent anatoxin contamination, up to half of the liver tumors can be traced back to this toxin. |
