REPPED: Consuming processed meats increases the risk of pancreatic cancer, says new research conducted at the University of Hawaii that followed nearly 200,000 men and women for seven years. Although many more people are stricken with cancers of the lung, colon, and breast, pancreatic cancer is a major killer. Most people who are diagnosed with cancer of the pancreas do not live more than six months. This poor survival rate is a result of the cancer's fast progression and a lack of effective treatments. Pancreatic cancer
Another type of cancer that is in desperate need of a cure is pancreatic cancer. Early diagnosis is not common and survival is usually limited to less than six months. A laboratory study using human pancreatic tumor cells indicates that resveratrol has potent abilities to kill off pancreatic tumor cells and say researchers, "is likely to be valuable for the management and prevention of human pancreatic cancer." When consumers eat sodium nitrite in popular meat products, nitrosamines are formed in the body where they promote the growth of various cancers, including colorectal cancer and pancreatic cancer, says Adams.

Coffee
Years ago, researchers reported the greater the consumption of coffee in a country, the higher the risk of pancreatic cancer in that country.37 An analysis of data from studies published between 1981 and 1993 did find some association between high consumption of coffee and an increased risk of pancreatic cancer.38 Surprisingly, however, the same report found that people drinking only one or two cups of coffee per day had, on average, a lower risk of pancreatic cancer compared with people who never drink coffee. |

Pancreatic Cancer
A case-control epidemiological study of 164 European patients evaluated the RR of developing pancreatic cancer. The comparison was between those in the fifth quintile of those who ate Tomatoes versus those in the first quintile. The RR was 0.23 (p<0.05). The cases were adjusted for sex, age, smoking status, and energy (Bueno de Mesquita et al, 1989).

Researchers who conducted a cohort study involving 13,979 residents of retirement homes in Los Angeles concluded that the "risk of pancreatic cancer decreased with increasing tea consumption." Yet another study, based on 213 pancreatic cancer patients and a cancer-free comparison group, revealed "significantly decreased risk" for those drinking green tea.17

Rats exposed to moderate levels of protease inhibitors in raw soy flour show increased susceptibility to cancer, while those subjected to high levels of the inhibitors suffer pancreatic cancer.47
Trypsin inhibitors potentiate two known pancreatic carcinogens, azaserine and nitrosamine. Though azaserine is a pancreatic cancer-causing chemical that is more likely to be found in the laboratory than in the average diet, nitrosamine is a byproduct of food processing found in most modern soybean products. Intravenous vitamin C was administered. After four 8-hour infusions, plasma levels of vitamin C exceeded 158 mg/deciliter. The patient received 39 IV vitamin C treatments in all over a 13-week period. A CAT scan failed to note any progression of the tumor at 6 months. The patient survived 12 months and received no radiation or chemotherapy. |
