Though palm oil is about half saturated fat—not necessarily a bad thing in this case—it is also about 40 percent monounsaturated fat. palm oil comes from the flesh of the palm fruit of a tree native to the tropical areas of Africa, where it grows wild. The reason it's red is that it contains a high concentration of carotenes. (In nontropical climates where the weather is cooler, the oil tends to be orange.) Palm Oil Contains Potent Antioxidants and Heart-Healthy Nutrients Palm oil contains natural antioxidants, specifically members of the vitamin E family.
Though I can't absolutely document this, responsible sources tell me that virgin palm oil is one of the richest natural plant sources of carotenoids, with fifteen times more than carrots and 300 times more than tomatoes. In any case, no other vegetable oil contains carotenoids in such significant quantities. Palm oil has a distinct, amazingly rich flavor, and is popping up at more and more natural food stores. One company I really trust that makes a great product is Tropical Traditions (www.tropical-traditions.com). Tropical Traditions palm oil is made in West Africa and is certified organic.
What's important here is that the tocotrienols are potent antioxidants and heart-healthy nutrients, and they are abundantly found in palm oil extracted from palm fruits. Palm oil is believed to have a very high concentration of carotenoids, which is what gives it the distinctive red coloring. Though I can't absolutely document this, responsible sources tell me that virgin palm oil is one of the richest natural plant sources of carotenoids, with fifteen times more than carrots and 300 times more than tomatoes.
Nonhydrogenated, in its natural, "virgin" state, palm oil contains absolutely no trans fats. Good supplemental forms of mixed carotenes include palm oil carotene products, algal products, carrot oil, and the various "green drinks" on the market, such as dehydrated barley greens and wheat grass. In regard to carotene supplements, there are five primary sources on the market: • Synthetic all-trans beta-carotene • Beta- and alpha-carotene from Dunaliella algae • Mixed carotenes from palm oil • Lutein • Lycopene Of the three sources of beta-carotene, mixed carotenes from palm oil carotenes seem to be the best form as they more closely mirror the pattern in high-carotene foods.

Tropical Traditions palm oil is made in West Africa and is certified organic. WORTH KNOWING even though virgin palm oil has a high smoke point (about 4500 f.), the longer you use it at high heat the more you will destroy the natural antioxidants. if you're frying with it, definitely don't reuse it. Sesame Oil (unrefined, cold pressed, organic) The introduction to this section on page 297 was a result of my internal debate over whether or not to include sesame oil in this book. Sesame oil has a lot to recommend it—but it's very high in omega-6s.

Palm and palm kernel oil are two different oils that come from the same species of tree, one from the seed and the other from the husk surrounding the seed. palm oil is obtained from the husk by steaming, heating, or pressing. Unlike other tropical oils, palm oil has only a small amount of MCFA. Palm kernel oil is extracted from the seed. The seed kernel is only an inch or so in diameter and resembles a miniature coconut. The appearance of the two oils is quite different. palm oil has a deep orange-red color which is due to the high concentration of beta-carotene and other carotenoids.

Health Benefits Unrefined palm oil is among the richest sources of beta carotene (three hundred times that of tomatoes and fifteen times that of carrots). It also has a high content of vitamin E (both tocopherol and tocotrienol), which helps retard oxidation, making it a naturally stable oil. However, since all palm oil used in the Western world is highly refined (crude palm oil has a reddish-brown color, which most consumers would probably reject), most of these vital nutrients are destroyed.

While some nutritionists campaign against the use of palm oil, since it has a higher content of saturated fats than soy or corn oil, the data actually shows that palm oil may LOWER the risk for heart disease, since it is rich in tocotrienols which are potent antioxidants that protect the blood vessel walls.85 palm oil is the second largest volume of vegetable oil produced in the world. Tocotrienols are very similar in structure to tocopherols, which is vitamin E. palm oil and rice bran are the richest sources of tocotrienols.

Much of this will come from biodiesel, and a major feedstock for this is palm oil grown on plantations in Indonesia and Malaysia. These plantations have been responsible for disastrous clear-cutting of the fast-declining natural tropical forests, destroying the habitat of rare species like the orangutan and causing major additional carbon releases through the burning of wood and underlying peat. In bad burning years, these Asian forest fires are the greatest single cause of greenhouse gas emissions apart from fossil fuel use.

When the cells are provided iron or saturated fat (palmitic acid- a ource of saturated fat commonly found in palm oil), there is only a slight drop in ATP cell energy. But when iron and saturated fats together are administered, the ATP cell energy is cut in half. This is troublesome because a characteristic of cancer cells is low ATP levels in the mitochondria.

It does not therefore require much imagination to understand why 'deforestation diesel' almost certainly has a worse impact on global warming than its conventional mineral counterpart: estimates have suggested that biodiesel based on palm oil feedstock can be ten times more carbon-intensive than fossil fuels. If we leave biofuels and nuclear out of any prospective energy portfolio because of their obvious drawbacks, we can still get our seven wedges in other ways. We need to halve the distances people drive each year, and we need to double vehicle fuel economy.

Naturally found in palm oil and available as a supplement, research suggests that tocotrienols are the most potent antioxidants in the vitamin E family. They also show promise for cancer prevention, especially for breast and skin cancer. Studies have found that they can bring down LDL cholesterol counts through the same mechanism as statins, and that they protect the heart. Dose: Take 100 mg per day of tocotrienols. This dose is fine to take in addition to the tocopherol form of vitamin E that's usually found in multivitamins.

Diets that are high in cholesterol and saturated fats (beef, pork, lamb, butter, cheese, palm oil, and coconut oil) contribute to poor fat ratios and elevated cholesterol. Even though total fat intake should be reduced, switching from saturared fats to vegetable oils will lower total cholesterol levels. Olive oil is your best choice for salads and cooking. Increasing fiber in the diet with whole grains, fruits, vegetables, and legumes is the optimal high-fiber diet. Soluble fiber such as the pectin in apples or oat bran has the most consistent beneficial effect on cholesterol levels.

But where cacao butter would have a natural place, such as in milk chocolates, instead of adding it during the conching or earlier steps in the process, large-scale manufacturers prefer to substitute cheap vegetable fats such as lecithin and palm oil. This is the usual practice with "summer" coatings—confectionery coatings used in budget or medium-priced boxed chocolates; such coatings are easier to work with because of their low viscosity, and they do not have to be tempered, but they have an inferior, watered-down flavor.

Most of our saturated fats come from animal products, although a few are from vegetable sources such as palm oil or coconut oil. Animal foods to reduce or avoid that contain saturated fat include beef, pork, lamb, and even chicken and turkey. Even though chicken and turkey are lower in saturated fat, they are actually higher in arachidonic acid than red meats. Salt can be another aggravating factor for women with menstrual cramps.
