Brown Rice in Palm Oil
4 cups water
2 cups brown rice
1 tablespoon red palm oil
1 garlic clove, minced (optional)
1 tablespoon cumin, ground A teaspoon cayenne (to taste)
1 teaspoon salt
In a pot, saute garlic in palm oil for 2 minutes on medium heat. Add spices and water, and bring to boil. Add rice. Cook with no lid on medium heat until water bubbles through top of rice. Then cover and steam rice on low until water is absorbed, around 25 minutes. Serves 4. |

In regard to carotene supplements, there are five primary sources on the market:

WORTH KNOWING even though virgin palm oil has a high smoke point (about 4500 f.), the longer you use it at high heat the more you will destroy the natural antioxidants. if you're frying with it, definitely don't reuse it.

Palm and palm kernel oil are two different oils that come from the same species of tree, one from the seed and the other from the husk surrounding the seed. palm oil is obtained from the husk by steaming, heating, or pressing. Unlike other tropical oils, palm oil has only a small amount of MCFA. Palm kernel oil is extracted from the seed. The seed kernel is only an inch or so in diameter and resembles a miniature coconut. Health Benefits
Unrefined palm oil is among the richest sources of beta carotene (three hundred times that of tomatoes and fifteen times that of carrots). Most of our saturated fats come from animal products, although a few are from vegetable sources such as palm oil or coconut oil. Animal foods to reduce or avoid that contain saturated fat include beef, pork, lamb, and even chicken and turkey.
