"Lean" and "extra-lean" refers to the fat content of meat, poultry and seafood. What these two terms mean...
Lean: Less than 10 g of fat, including no more than 4 g of saturated fat and less than 95 mg of cholesterol per 3-5-ounce serving.
Extra-lean: Less than 5 g of fat, including no more than 2 g of saturated fat and less than 95 mg of cholesterol per 3.5-ounce serving.
OTHER TERMS

The results of the diet survey showed that obese children processed 14.4% less magnesium from the foods they ate than lean children, even though obese and lean children ate about the same number of calories per day. The mothers who got the methyl group supplements produced standard, lean, brown mice, even though their offspring had the same agouti gene as their mothers. The agouti mothers who didn't get the supplements produced yellow pups, which ate much more than the brown pups. The yellow pups wound up weighing almost twice as much as their lean, "pseudo-agouti" counterparts.

Even though this is saturated fat, by removing the skin from the meat you still can have a very lean protein meal.
Obviously the worst fats and protein come from our red meats and dairy products. If you are going to eat red meat, at least eat the leanest cut you can. You should avoid dairy products except for low-fat cottage cheese, milk, and egg whites. If you are going to eat eggs, try to get range-fed chicken eggs, which contain omega-3 fatty acids.

So perhaps we should lean toward the validity of the Finnish study. Yet two previous studies (cited by both the Nurses and the Finnish researchers), both smaller and with less powerful designs, found no relation between stress and breast cancer risk. The fact that there is a three-fold higher death rates from colon cancer in the northeastern US compared with sunnier southern regions, has caused researchers to lean towards vitamin D deficiency rather than calcium as a more plausible preventive factor for colon/rectal cancer. Researchers believed vitamin D, which helps the body absorb and utilize dietary calcium, is the key factor in colon cancer prevention.
