It is the first time that any internationally-recognized cancer organization has found the courage to make a partial proclaimation about the health hazards of the chemicals found in processed meat products. It's almost as big a deal as when the American Medical Association, after years of taking millions of dollars from tobacco companies, finally admitted that smoking causes lung cancer and heart disease. (A decade after the scientific evidence was irrefutable, of course, but then again, the AMA was making money off Big Tobacco by running tobacco ads in JAMA... |

Due to the health hazards associated with xenoestrogens that were mentioned in Chapter 2, we urge you to eat only organic meats and poultry, which are produced without chemicals or growth hormones.
Even with organic meats, some choices are better sources of protein than others. Red meat is usually higher in fat, particularly saturated fat. There are, however, plenty of lean complete proteins, including the breast meat of poultry and eggs from organic, free-running hens. |

They tracked down lists of known and suspected chemical health hazards from various government and academic sources — lists from the US FDA, EPA, National Toxicology Program, European Chemical Bureau and peer-reviewed academic journals — and merged them together into a common database.
If you'd expect the cosmetics industry to have a central list of product ingredients, you might suppose the government would already have a central database of hazard information about chemicals. |

With the health hazards of chemical exposure just beginning to emerge (and additional health problems likely to be discovered in the years ahead), it's a no-brainer to spend a few extra dollars to eliminate a common source of BPA ingestion by babies. As the well-worn question puts it, "Isn't your baby's health worth it?"
Where to get these BPA-free baby bottles
Whole Foods is apparently carrying the bottles now, so you can check retail stores for inventory. |

Cooking meats at high temperatures also creates other health hazards, such as the formation of gene-mutating toxins—carcinogens—that significantly increase your risk of cancer (see "Cook to Your Health," page 103).
Eating Out
Following an antiglycation eating plan when dining out is easy. One tip is to always verify with the waitstaff how a particular menu item is prepared. If you don't see what you want, ask if a particular item can be made for you. For example, if a fish dish on the menu is offered grilled, ask if it can be poached. |

Over the next few years, the top experts in public health research pored over data from twenty different countries examining the health hazards of tobacco.
Kennedy distanced himself from the process. When asked in 1962 about his own opinion on the risks of smoking, the charismatic, cigar-smoking president provided a politically adept, completely noncommittal reply: "The matter is sensitive enough, and the stock market is in sufficient difficulty, without my giving you an answer which is not based on complete information, which I don't have. |

Think about how many more deaths could have been prevented if the FDA didn't blatantly push for the drug's approval in spite of its health hazards.
The bottom line is the FDA must change, or be gutted and rebuilt from the ground up. It must reform in ways much more far reaching than what was outlined in the GAO report, though those changes will no doubt make a difference. Perhaps the FDA should take its own slogan to heart: "Do it right the first time. |

Millions of women around the world, without being aware of the potential health hazards of ultrasounds, are participating in the largest medical experiment of all times. Their babies are the guinea pigs in this experiment. They become vulnerable to external and internal harmful influences when their delicate electromagnetic fields are distorted, misaligned or damaged by highly concentrated doses of ultrasound; exposure to that is neither natural nor suitable for any human being. |

Yet few people truly understand the health hazards posed by the mercury found in these lights.
Fluorescent lights are filled with a gas containing low-pressure mercury vapor and argon. The inner surface of the bulb is coated with a fluorescent coating made of varying blends of metallic and rare earth phosphor salts. When a high-voltage current is passed through this vapor, the electricity causes the gasses to "fluoresce" or emit light. |

Edward Head-lam Greenhow began a systematic investigation of the health hazards of the textile trades. Greenhow was working under the aegis of John Simon, who orchestrated a series of public health reports for rhe Privy Council, a governmental body in which Simon served in a role somewhat analogous to that of the U.S. surgeon general.
Greenhow was commissioned to carry out a number of field investigations, collecting data on respiratory diseases among a spectrum of manufacturing towns in England. |

Chemicals toxic to one form of life are likely to cause human health problems too, one way or another. |

We know of many instances where insurance companies tracked health hazards for years, as claims mounted and reports of various ailments accumulated, without letting workers know the dangers they faced. We also know that current laws discourage giving such information up. The federal Toxic Substances Control Act provides criminal penalties for anyone who has knowledge that someone endangers public health or the environment and does not report it. The result is that most companies no longer develop such knowledge or collect such information, so that they can't be charged with breaking this law. |

Sage is completely safe, and no health hazards or side effects are known. However, sage may decrease breast milk supply and is considered by some experts to be a uterine stimulant—virtually all pregnancy experts advise that sage and sage preparations should not be taken during pregnancy. e

No health hazards or side effects are known with proper use. On rare occasion, a contact allergy has been observed. Though rosemary is perfectly safe in amounts normally consumed in foods, in medicinal dosages it should not be used during pregnancy due to concerns that it might have uterine-and menstrual flow-stimulant effects.

M any of today's health hazards are not at all like those of the massive sick building in Texas or the inefficient old buildings of Harvard and the University of Pittsburgh Medical Center. Chronic ailments do not conveniently become evident when people suddenly succumb to symptoms neatly in one locale. Instead, cancer and neurological disorders arise over years of time as a result of assorted triggers in our lives that may reflect where we have worked, what we have eaten, and where we happen to live now and in the past. |
| The standard protective and hygienic measures currently used in industry to combat industrial poisons and other health hazards are not always adequate for the control of occupational cancer. The following case history is a compelling illustration. Some thirty years ago workers in one of the newer metal industries began to develop lung cancers. At that time the cancers were found to remain latent from ten to fifteen years. The incidence was unusually high in certain operations where the carcinogenic substance was present in particularly high concentration as an airborne dust. |
