Organic and Other Natural Foods
Many people believe that organic, natural, and health foods are all about eating only vegetarian foods, such as tofu and bean sprouts. Nothing could be further from the truth.
Natural foods are usually simpler, less-complicated foods and meals. health foods are any food that's healthy, in contrast to blatantly unhealthy foods. None of this means that natural foods have to taste bad. To the contrary, any good cook relies more on herbs and spices and less on salt and pepper to make a delicious meal. |

The point here is this: Wonderful, amazing health foods like eggs (with their yolks) and coconut have been absent from the American diet, for no other reason than that people—including doctors—simply don't really understand the full story when it comes to fat.
The human body needs fat. We can't exist without it. It's incorporated into our cell membranes. It's used as an energy source. It cushions and protects our organs. It makes certain critical vitamins—like vitamins A and D—available to us. |

People's taste buds have been numbed by the tastes and textures of processed foods. Natural foods—which are really high-quality foods—have wonderful flavors.

Even if real whole grains were added to these super foods feeding our nation at breakfast time, this certainly wouldn't turn them into health foods. Consider what's in a cup of Trix, for example. The nearly iridescent colors of the popular cereal show that it is saturated with artificial coloring agents. To keep it fresh, it has to have preservatives which "preserve" (prevent) it from being digested properly. So what is it about oatmeal that makes it go to the head of the list for everyone's favorite health foods? Let's start with fiber. Oats are simply a great source of fiber and contain a nice mix of both essential kinds (55 percent soluble and 45 percent insoluble). But the soluble fiber in oats, known as beta-glucan, is really responsible for giving oatmeal its high nutritional accolades.

By the way, it's interesting that of the fifteen experts I surveyed for their "top ten favorite health foods" (sixteen if you include me!), not a single one chose soy.
Edamame (green soybeans)
As you might have guessed by a cursory glance through this book, I'm not a huge fan of soy (to read why so few soy foods are included in this book, see page 166). One soy food I do like well enough to ^^^^^ include it in the top 150 foods is edamame.
