Agave syrup (or nectar) is about ninety percent fructose, a form of natural sugar found in fruit. fructose does not impact blood glucose (glycemic) levels as dramatically as other sweeteners such as cane sugar. Even better, because fructose is sweeter than table sugar, less is needed in your recipes. Agave also contains a complex form of fructose called inulin. A type of friendly bacteria called bifidobacteria digests inulin to produce short-chain fatty acids that have been shown to fight colon cancer. Rather than enter the bloodstream, fructose goes directly to the liver, where among other things it stimulates the formation of triglycerides, the precursor of what we commonly refer to as cholesterol. (Remember this fact about triglycerides; it's a key to success later.) Because fructose doesn't enter the bloodstream, insulin rises much more slowly and leptin isn't activated. Sneaky fructose bypasses both feedback defense mechanisms your body has developed to stop overeating.

Also eat a slice of bread or some crackers spread with honey, or any other food that is high in fructose, after a heavy drinking session. The fructose (a natural sugar) helps the body burn off alcohol faster. Other good sources of fructose are apples, cherries, and grapes. You can also try eating an umeboshi plum—these have long been reputed to cure hangovers. They are available at Asian markets and health food stores.

As it turns out, fruits contain a great deal of fructose. It reduces glucose tolerance, interferes with normal insulin function, increases insulin levels, promotes insulin resistance, and increases C-peptide levels (another marker of insulin resistance). fructose is not safe for diabetics—or anyone else.

Throw out any foods and beverages that contain sugar, including sucrose, fructose, corn syrup, and high-fructose corn syrup. Next, throw out all foods that are made with partially or fully hydrogenated oils. Look specifically for the word hydrogenated on labels because the types of oil may differ. In addition, dispose of all foods that contain shortening, corn oil, soybean oil, wheat, or flour.
You may be shocked by how much food you'll throw out. Reversing prediabetes means that you must emphasize fresh over packaged foods. |

I also like onion soup, another folk remedy for hangover and a surprisingly good source of fructose.
V fructose. fructose is fruit sugar. Korean scientists have suggested that fructose can speed up the body's metabolism of alcohol by about 25 percent.
Ginseng root is a favorite herb in Korea, and ginseng contains approximately 0.5 percent fructose. Perhaps that's why both Asian (Panax ginseng) and American (P. quinquefolius) ginseng have a long history of use for treating hangover. Personally, I rarely recommend ginseng because it costs so much. |

And her hawking of her special sweetener, SomerSweet, as a "miracle" because it's made of fructose and "has little effect on insulin" doesn't exactly inspire confidence. fructose is actually linked to insulin resistance (through a mechanism other than raising blood sugar), and it also raises triglycerides—a serious risk factor for heart disease. (For more on triglycerides, see page 42) The Drs. Eades called fructose "potentially the most dangerous and damaging of all the sugars." Some miracle. |
| Even though it doesn't raise blood sugar very fast, it induces insulin resistance in both animals and humans. fructose is turned to fat in the liver, so it raises your triglycerides. High-fructose corn syrup is the worst offender of all. When you consume fructose, make sure it comes in its natural container—fruit—surrounded by fiber. Never use it as a sweetener, and don't make a habit of eating foods that are sweetened with it.

In a normal physiology, once the sorbitol is formed, it is metabolized by polyol dehydrogenase to fructose. This conversion to fructose allows it to be excreted from the cell.
