You can buy flax meal, which is ground seeds, but I always think fresher is better when you have the time. That said, 4 tablespoons of flaxseed meal will give you 6 g of protein and 8 g of fiber.) And in addition to all the other good stuff, flaxseeds are also anti-inflammatory and have antioxidant properties as well.
Flax promotes cardiovascular and colon health, can boost immunity, promotes healthy skin, and helps stabilize blood sugar. Because the lignans in flax are actually phytoestrogens (weak estrogenic compounds from plants), they may help relieve menopausal symptoms. |

DESCRIPTION
Flaxseed, also known as flax oil and linseed oil, is derived from the seeds of the plant Linium usitatissimum. Flaxseed oil is a very rich source of alpha-linolenic acid. Alpha-linolenic acid concentration in flaxseed oil ranges from approximately 40 to 60%. Lower amounts of linoleic acid and oleic acid (each about 15%) are also present in flaxseed oil. |

There's a third omega-3 called alpha-linolenic acid (ALA), and it's found in plant food, specifically flax and flaxseed oil. The body can theoretically make EPA and DHA from ALA, but it does a lousy job of it, converting only about 10 to 20 percent into EPA and DHA. I like flaxseed oil, which has nice antiinflammatory properties of its own, and if you can't or won't take fish oil, it's the next best thing (one excellent store brand is Barlean's). Ideally, take them both. You can add flaxseeds to salads and smoothies and use flaxseed oil as a part of a salad dressing. |

You see, if you turn flax into the currency, you would actually have something of substance, whereas today the dollar is based on absolutely nothing. And, of course, the Federal Reserve determines what a dollar is worth by how much money it creates in the M2 money supply. (Neat trick, huh? They just print up more money and spend it. If you did the same thing, you'd go to jail for counterfeiting...)
So if you think this is a silly idea, don't knock it until you've tried it. The flax Tax could really work. I'm serious. It could totally work. |

Great health coming from nature aside, the flax side of the business and fishery employed many people for a small county like Whatcom. Clearly, this was an important business, important to the economic vitality of a region. This was also a carbon-neutral business of first-rate national importance.

Hopefully you're already familiar with the benefits of flax seeds, which have healthy omega-3 oils that boost cardiovascular health and enhance brain function. You probably also know that flax contains lignans, which boost immune system function, and that contain good, healthy fiber that reduces your risk of colorectal cancer and enhances digestive health. There are also many other phytonutrients in flaxseed, but we won't go into that. Suffice it to say, this is an excellent ingredient. And you'll notice they used sprouted flax seeds instead of just tossing in dry flax seeds. |

So, if we did have a flax Tax, I'm sure there are plenty of people who would help build roads just to get some healthy food on the table. You CAN pay people in nutrition. It's been done before: ancient civilizations in South and Central America actually used cacao (real chocolate) as a form of currency. (Wow, you could actually EAT your savings account and feel good about it!)
Flax currency is actually worth something!
Our modern system of currency is worthless anyway. Those silly pieces of green paper with Presidents' pictures on them... you think that money stands for anything? |

Flaxseed Oil
Flaxseed oil, also known as flax or linseed oil, is made from the seeds of Linum usitatissimum. flax is a very rich source of ALA, containing approximately 40% to 60% of this essential fatty acid. Linoleic acid and oleic acid are also present, but in smaller amounts (about 15% each). In addition, flaxseed oil contains secoisolariciresinol diglyco-side, a type of phytoestrogen known as a lignan, in varying amounts. Flaxseed oil may have anti-inflammatory, antithrombotic, and antiproliferative activities. |

The soluble fiber in the seeds can cause the liquids in the dish to thicken, and high heat damages the delicate essential fatty acids in flax (and heating/frying with flax oil under high temperature generates cancer-promoting compounds).

I recommend adding one or two tablespoons of ground flax meal to your salads, soups or smoothies. Flaxseed is also a good source of omega-3 fatty acids, and it is by far nature's richest source of plant lignin, an important anti-cancer phytonutrient.
My family has been intuitively adding flaxseed to our meals every day either in the form of crackers or as flax meal. Igor has perfected a method for dehydrating flax crackers to such a degree that he knows how to make his crackers taste like pumpernickel, or sourdough toast, or everyone's favorite Russian caraway bread. |

JUST THE FLAX
If we were to look for an ideal case study to broaden our appreciation for food synergy, we'd need look no further than flax. The synergy inherent in this little seed is drawn from a number of its components, though the specific dynamics remain unclear. For example, many studies have clearly demonstrated that flaxseed offers cancer-protective effects in the body, but researchers aren't sure just which specific component accomplishes that. It could be the plant's lignans, its omega-3sor the synergistic interactions between these components. |

For breast cancer patients, the news on flax also sounds promising. In animal studies, flaxseed increased the effectiveness of the breast cancer drug tamoxifen, but no clinical trials on the flaxseed interaction with tamoxifen, or other breast cancer drugs, have been conducted on breast cancer patients. German research, meanwhile, has linked plant lignan intake and a reduced risk of breast cancer. Studies there have found that premenopausal women eating a high level of lignans experienced a 64 percent reduction in breast cancer risk. |

Flax is added to smoothies to add soluble and insoluble fiber and essential fatty acids. When you buy flaxseed products they should have a fresh nutty flavor. If the product starts to smell rancid or fishy, throw it out. Refrigerate the oil and keep the whole flaxseed and ground flaxseed in the freezer and it will stay fresh longer. If you have whole flaxseeds, they should be ground before you add them to a smoothie. Use a food processor, blender, or a coffee grinder for the job.

If you are reading this and want to do something for your overall health, for the prevention of disease, for increasing health and vitality, I would suggest going to your local health food store and getting some whole flax, which is a great source of fiber, or some flaxseed oil or linseed oil and adding it to your diet. Talk to some people at your local health food store. Go online and do some searches on flaxseed oil, flax or linseed oil. Get some information; take responsibility for your own health. Consider adding this into your diet. |

Keep your ground flax in the freezer to preserve its freshness, and add a tablespoon a day, if you can, by stirring it into your yogurt, cereal, smoothie, or stew.
When baking, you can usually replace Va cup of every 1 cup of flour in recipes with ground flaxseed. This means that instead of 1 cup of flour, you could use Va cup flaxseed and 34 cup flour.

| The seeds from the flax plant amazingly lower your cholesterol levels and your blood pressure at the same time. Loaded with soluble fiber that lowers cholesterol, flaxseed is also the best plant source of omega-3 fatty acids.
These fats, found mainly in fish, keep your blood from sticking, regulate your heartbeat, and lower your blood pressure. They've also been shown to lower cholesterol.
Whether because of the soluble fiber, omega-3 fatty acids, or some other ingredient, flaxseed works. Studies have shown flaxseed can lower cholesterol by as much as 14.7 percent. |

There's just not enough flax to go around. Hogwash! There are a number of solutions for that. For one, you could make other forms of omega-3 oils an alternative accepted currency. For example, people could pay in chia seeds. They could just fill up their pockets with chia seeds, drive down to the local post office and pay their taxes with this ancient Incan superfood. (The Incas ate chia seeds as "warrior food" because it gave them such great energy that they seemed altogether invincible... that is, until the Spaniards arrived and destroyed the chia-chewing Incas. |
| Trade in your useless paper money for something with real value: flax! (Just don't eat all your savings at once...)
