I understand you have actually been a proponent of chia for a long time. What first got you interested in chia?
Dr. Liers: Well, certainly seeds are the progenitors of life. Any time you have a seed, you have everything needed to make it into something wonderful. I think oftentimes you just have to follow your intuition on things -- you see it and eat some of it, and it just feels right to you. My interest in chia bubbled under the surface for years because they were not readily available.

For example, people could pay in chia seeds. They could just fill up their pockets with chia seeds, drive down to the local post office and pay their taxes with this ancient Incan superfood. (The Incas ate chia seeds as "warrior food" because it gave them such great energy that they seemed altogether invincible... that is, until the Spaniards arrived and destroyed the chia-chewing Incas. Which is why modern Peruvians speak Spanish, if you can believe that...)

Can you talk about the nutritional content now, in terms of macronutrients, of the chia seed?
Ayerza: Okay, we've talked about the omega-3 up to now – that came from 34 percent of oil, of which 64 percent is omega-3. But in addition to that, it's very rich in protein; it's got 21 percent protein, which is very high for an oil crop, and this protein is very high in important amino acids. It's perfect for adults; it's even rich in lysine, one of the amino acids that is not in corn, and not in many things, and it's a very good source of fiber. It has 39 percent of its weight as fiber. |
| Are you seeing more and more interest in chia seeds?
Ayerza: Oh yes. In the conference, there was an amazing quantity of people interested in that. And in this conference you can see how many people are coming, but it's not just from the USA; it's from Europe and, of course, from Mexico. They say, "I know that." Of course, this is originally from Mexico. And you're discussing it, but you need to come back – and the book will help a lot, I think – because it's a forgotten crop of the Aztecs. |

Mike: Another reason people might not want a marine source of omega-3 is because of the mercury poisoning in the fish and the heavy metals, right?
Ayerza: You are right. And that is a problem that is coming up and increasing every year. Unfortunately, there are few solutions we have for that, and fish still has that problem. |

It's the "super chia" I'm talking about here.
This super chia isn't black like chia, however. Its seeds are white. What does that mean to you as a consumer? It means that you can put it in a coffee grinder and grind it up into fine white flour. Then you can take that white flour-like substance – which is really loaded with omega-3 oils and complete proteins and minerals that are missing from wheat-derived flour – and you can put it into breads and pasta and use it as a replacement for flour in your kitchen. |

It has chia seeds in it, too. Again, it was to get some essential fatty acids, and to get, as you know, the fiber from chia seeds, which is a truly wonderful fiber, plus antioxidants, and just a little extra protein. Part of it is, if you put superfoods together in a nice combination, they are each going to contribute in their own way. There is no single thing that does everything.

Chia Seed
The often-ridiculed seed of the "instant pet," chia seeds have a history as a nutritious flavoring for soups and beverages. They were used by ancient mountain and desert-dwelling Native American civilizations. Aztec warriors used carbohydrate-rich chia seeds as an energy booster.
