But what about the highly touted omega-3s in canola oil, you ask? Omega-3S are great —I've been singing their praises throughout this book —but they easily become rancid and foul-smelling when subjected to the high temperatures needed to extract the canola oil. Therefore, they have to be deodorized. The deodorizing process turns a large number of the omega-3 fatty acids into trans fats. (The University of Florida at Gainesville found trans fat levels as high as 4.6 percent in commercial canola oil, even more than in margarine. |

I liked the story that Margaret Juhae Lee wrote in the Green Guide about her future mother-in-law, who collected canola oil and used it to fuel her car. "One afternoon a week, Carol drives to a restaurant-supply company in her hometown of Lafayette, Louisiana to fill her car's gas tank with canola oil.27
"Each five-gallon jug of canola oil costs $20, which works out to $4 a gallon. It's more than what I would pay at the gas station, but I get around 32 miles per gallon for city driving," Carol told the Green Guide. "And I can relieve some of my guilt about being an American oil glutton. |

Nutritionists can be divided into two camps on certain controversial issues, soy being one of them, canola oil being another. Conventional "wisdom" is that canola oil is a wonderfully healthy oil that should be used as much as possible. Minority opinion is that it is an overhyped, unhealthy oil whose success is completely due to brilliant marketing on the part of the oil industry.
I am firmly in the camp of the second group.

Almond oil is currently reviewed better than canola oil (rape seed) by various practitioners and researchers. canola oil, belonging to the mustard family, is derived from seeds of a plant considered (by some) to be toxic. canola oil, when processed, appears to become rancid very quickly and may over time increase the incidence of heart disease. Refrigeration does not appear to retard its oxidation (Fallon 2002). canola oil proponents still uphold its value, but until more questions are answered regarding its safety, it seems wiser to select the tried and true olive oil. |

The Health Ministry in Canada insists that although their tests match the Japanese data, canola poses no risks to humans. Yet canola oil consumption has been correlated with development of fibrotic lesions of the heart, lung cancer, prostate cancer, anemia and constipation. The long-chain fatty acids found in canola have been found to destroy the sphingomyelin surrounding nerve cells in the brain. Other illnesses and conditions that have been associated with canola oil consumption include loss of vision and a wide range of neurological disorders. |

While olive oil and canola oil are by far the most popular monounsaturated fats in use, macadamia nut oil is superior to cook with because of lower levels of polyunsaturated oil (3 percent for macadamia nut oil versus 8 percent for olive and 23 percent for canola). As a result, while olive oil and canola oil can form lipid peroxides (rancid byproducts created through oxidation) at relatively low cooking temperatures, macadamia nut oil is stable at much higher temperatures (over twice that of olive oil and four times more stable than canola). |

Many people have asked me about canola oil, since it is marketed as being very safe and healthy. Few people realize that canola oil is produced from very toxic rapeseed oil. To make it fit for consumption, processors attempt to remove the toxic components, but serious questions have been raised recently as to the success of the purification process. I advise avoiding canola oil at this time, until the issue is settled.
I recommend that you make your own salad dressing. The base oil should be extra virgin olive oil extracted by the cold press method. |

Cholesterol
The next line of the Nutrition Facts box indicates the amount of cholesterol, in milligrams (mg) per serving. Yet this information maybe a little deceiving. A cholesterol-free product may contain sugars, other refined carbohydrates, or trans fats, each of which can boost your body's production of cholesterol. |

I don't recommend canola oil. To be used commercially, it has to be partially hydrogenated, refined, and deodorized, and in the process its omega-3s become a potent source of trans-fatty acids. If you do use it, make sure to get organic, cold-pressed, or expeller-pressed canola oil (such as Spectrum), and only use it cold.

Guideline5. Drink Water and Teas
Here's why: When we're thirsty, our bodies are signaling that they want water. Yet many people quench their thirst with coffee, juices, or soft drinks that contain large amounts of sugar, caffeine, or both. Diet soft drinks also have their downsides: the artificial sweetener aspartame is closely related to a stimulating neurotransmitter, which may contribute to impulsive or hyper behavior, and phosphoric acid reduces bone density. |

Most natural food stores carry Spectrum Naturals Canola Mayonnaise, which uses naturally processed canola oil, pasteurized eggs, honey, and other natural ingredients. Culinary Uses
Unrefined canola oil has a fresh golden color and rich, savory flavor, but most canola oil found in stores is highly processed and rather mild. This highly processed oil is best suited for dishes where you do not want a pronounced flavor, or it can be used directly on salads, raw vegetables, potatoes, and grains. Because of its omega-3 fatty acid content, canola oil should not be used for cooking at over 320 degrees Fahrenheit. |
