Green, oolong, and black tea are made from the leaves of the Camellia sinensis plant and are rich in cardioprotective flavonoids. Green tea is especially rich in the flavonoids called catechins. Both green tea and black tea are derived from the same plant, Camellia sinensis. The difference between green and black teas results from the manufacturing process. Green tea is produced by lightly steaming the fresh-cut leaf. Steaming prevents enzymes in the tea leaves from converting the beneficial polyphenols. To produce black tea, the leaves are simply dried and the beneficial polyphenols are allowed to oxidize and form larger complexes, known as tannins.

Because green tea leaves are young and have not been oxidized, green tea has up to 40 percent polyphenols, while black tea contains only about 10 percent. Another interesting note: Green tea has one-third the caffeine of black tea. Even better, it's been shown to yield the same level of excitement and attentiveness, but in more even levels than the ups and downs associated with other caffeinated drinks. Just don't drink milk with it; the casein in milk has been shown to inhibit the beneficial effects of tea.

| Cocoa has more phenolic phytochemicals and a higher antioxidant capacity possibly than any other food, including green tea, black tea, red wine, and blueberries. Flavonoids found in chocolate include the flavonols, notably epicatechin, catechin, and proantho-cyanidins. It is also a rich source of the antioxidant theobromine. Many dark chocolate products with a high percentage (seventy percent) of cocoa contain more of these type of antioxidants, but that is not always a guarantee. Green Tea was sixfold more potent than black tea. The addition of milk to either tea did not appreciably modify their in vitro antioxidant potential. In vivo, the ingestion of tea produced a significant increase of TRAP (p<0.05), similar in both teas, which peaked at 30 to 50 minutes. When tea was consumed with milk, the in vivo activity was totally inhibited. The inhibition of this effect by milk is thought to occur due to the complexity of tea polyphenols by milk proteins (Serafini et al, 1996). |
