T. gondii reproduces by copying itself during the life of its host, but it's only in cats that it undergoes sexual reproduction, producing new oocysts, or spore cells, that can go on to find new hosts. Infected cats distribute oocysts in their droppings. The oocysts are hardy little organisms that can survive for as long as a year in tough conditions. When rodents, birds, or other animals ingest the oocysts, they become infected; animals can also become infected by eating the flesh of an infected animal. |

Plants do not appear to need selenium for survival. If selenium is present in soil, plants will take up the selenium.
Selenium is used in the body in antioxidant enzymes, by the immune system, and in conjunction with iodine to control metabolism. Approximately 30 percent of tissue selenium is found in the liver, 15 percent in kidneys, 30 percent in muscle, and 10 percent in blood plasma, as seen in Figure 13-2.

Like other antinutrients and toxins in soybeans, isoflavones seem to have evolved to ensure the plant's survival. In a dry year, desert annuals exhibit stunted growth but greatly increased levels of phytoestrogens. When eaten by California quail, these compounds inhibit their ability to reproduce and so prevent the birth of young who would starve because of insufficient food. Bone tissue is constantly being dissolved and replaced in the body in a process called bone remodeling. Bone cells called osteoclasts begin the process of bone remodeling by dissolving bone, as diagrammed in Figure 9-1. This is called bone resorption. New bone is then synthesized by bone cells called osteoblasts to replace the resorbed bone. When bone formation exceeds resorption, bone is growing. |
