Miso
Miso is a soybean paste that has been a mainstay of Japanese cooking since the seventh century. It's made by mixing cooked soybeans with salt, a grain, and a fermenting agent called koji. There are many varieties of miso; hacho miso is made only from soybeans, and natto miso is made from ginger and soybeans. Most of the others are made from soybeans and a grain.
Despite my reservations about soy in general, there is a lot of research on the benefits of some soy protein in the diet, and miso would be one way to get soy protein in your diet from a healthy traditional food. |

The effects of 30 grams of soybeans fed daily for 1-3 months to 37 healthy adults were investigated. soybean consumption resulted in a significant increase in TSH levels, although levels remained within normal limits. However, researchers did discover a marked reduction in breast cancer risk with increasing consumption of miso soup, which is made from soybean paste. The incidence of breast cancer dropped from 109.7 to 57.2 per 1 00,000 Japanese women when they increased their miso soup consumption from one to three cups a day. An interesting study recently was conducted in Japan, a country known for its soy consumption and low rate of breast cancer. When Japanese researchers finished analyzing the results of a survey of 209,354 persons regarding their soy consumption, it was found that soy foods did not confer a reduction in breast cancer risk, but frequent consumption of miso soup did. With each bowl of miso soup consumed on a daily basis there was a greater reduction in breast cancer risk. But miso is soy. What's the difference? |

In a 3-week study, intensive care patients were given either soybean oil, a 50-50 combination of soybean oil and MCTs, or a "cocktail" that consisted of 50 percent soybean oil, 42.5 percent MCTs, and 7.5 percent black currant oil.12 The patients who were given the soybean oil-MCTs combination had much higher levels of EFAs in their bodies than did those taking soybean oil alone.

Cream of broccoli soup can have a bacteria gene in it, and salad dressing is most likely made with canola oil, vegetable oil or soybean oil (all genetically engineered).
