Can you have your favorite breakfast and stick to the south beach diet? Yes, with a few modifications. Cook the eggs in a healthy way, such as boiling or poaching. If you fry, use a spray oil—either soy, canola, or olive—rather than butter or margarine. Try Canadian bacon instead of the usual kind—it's leaner, lower in saturated fat, and higher in protein than the regular kind. The potatoes have got to go—there's no way to salvage them. But they can be replaced with cereal, especially oat bran, which has lots of fiber and helps with cholesterol, too.
This is not usually the case for weight-loss plans, which is why it was so important to us that the south beach diet work no matter who does the cooking. The dining-out dilemma was especially painful for people on low-fat regimens. You either had to give the waitstaff the third degree—What are the chicken breasts sauteed in? What exactly is in the vinaigrette?—or you had to bring your own food and hope no one objected. Even if they didn't, there was something sad about seeing healthy adults hovering over their Tupperware containers while their tablemates enjoyed fine dinners.
But my experience with patients showed that those so-called heart-healthy diets were nearly impossible to stick to, because they relied too heavily on the dieters' ability to eat superlow fat over the long haul. The south beach diet would permit lean beef, pork, veal, and lamb. The low-fat regimen's severe restrictions on meat were unnecessary— the latest studies had shown that lean meat did not have a harmful effect on blood chemistry. Even egg yolks are good for you contrary to what we once believed.
I say this with such confidence only because so many overweight people who have already succeeded on this program tell me so. The south beach diet may be new to you, but it has existed for several years—long enough to have helped hundreds of people lose weight easily and keep it off. So that's Phase 1, the strictest period. After 2 weeks of that, you will be somewhere between 8 and 13 pounds lighter than you are today. Most of that weight will come off your midsection, so right away you'll notice the difference in your clothes. It will be easier to zip your jeans than it's been for some time.
Nor is it low-fat. The south beach diet teaches you to rely on the right carbs and the right fats—the good ones—and enables you to live quite happily without the bad carbs and bad fats. As a result, you're going to get healthy and lose weight—somewhere between 8 and 13 pounds in the next 2 weeks alone. Here's how you'll do it. You'll eat normal-size helpings of meat, chicken, turkey, fish, and shellfish. You'll have plenty of vegetables. Eggs. Cheese. Nuts. You'll have salads with real olive oil in the dressing.
I went to the nutritionist, and she set me up on a 4-week version of the south beach diet. In the first 2 weeks I lost about 8 pounds. But it left me feeling a little weak. Then I started adding back some carbs, and I felt better, and the weight kept coming off. Bread was my big weakness back then. I ate it with every meal, and sometimes I ate it between meals. If I went to a restaurant I'd feast on the bread basket, to the point where I wouldn't be hungry when dinner came. I'd have to take it home many times. So I cut the bread out completely.
