| Modern-day Science is just beginning to confirm the ancient uses of sage as both a medicine and a preservative. It has been shown that sage contains compounds that can keep food preserved and serve as powerful antioxidants. Sage was given the distinguished title of "Herb of the Year" in 2001 by the International Herb Association.
HEALTH BENEFITS
The Health benefits of sage are similar to those attributed to other members of the mint family. Sage is perhaps most similar to rosemary (see page 505). The primary medicinal components in sage are volatile oils, flavonoids, and ros-marinic acid. |
| Food and Agriculture Organization and the World Health Organization, our feeling is that the Science conducted so far on food irradiation is far from complete. In other words, we question how there can be such a strong position on its safety without a more complete evaluation.
One of the real concerns about food irradiation is that it might be used to mask poor sanitation practices in food production. For example, instead of measures being taken to clean up and sanitize production facilities, food irradiation can be used as a way to mask fecal contamination of meat products and poultry. |
| National Academy of Science, the U.S. Department of Health and Human Services, and the National Cancer Institute recommend that Americans consume a minimum of three to five servings of vegetables per day.
Another answer to the question "How should we eat vegetables?" is: Raw. In their raw form, vegetables provide many important phytochemicals in much higher concentrations. However, some of the most beneficial carotenes, such as lycopene and lutein, are better absorbed from cooked foods. |

THE Science OF INDUSTRY
The CLA story is a good example of how industry uses Science to increase demand for its product in order to make more money. At the very least, industry Science often leads to public confusion (Are eggs good? Are they bad?), and at its worst, industry Science leads unsuspecting consumers to foods that are actually bad for them, all in the name of better Health.
Conflicts of interest abound in this Science of industry. The CLA research was created with special interest money and has grown and been sustained with special interest money. |
| For adults, the industry puts a heavy emphasis on "science" and the communication of research results that might be construed as showing Health benefits from eating dairy foods. The dairy industry spends $4 to $5 million a year to fund research towards the goal of finding something healthy to talk about.7 10 In addition, the dairy industry promoters employ a Medical Advisory Board made up of doctors, academics and other Health professionals. These scientists are the ones who appear as medical professionals in the media, providing science-based statements supporting the Health benefits of milk. |
| Institutions also are part of the dark side of Science. Committees like the Public Nutrition Information Committee and the American Council on Science and Health generate lopsided panels and committees and institutions that are far more interested in promoting their point of view than debating scientific research with an open mind. If a Public Nutrition Information Committee report says that low-fat diets are fraudulent scams, and a National Academy of Sciences report says the opposite, which one is right?
In addition, this closed-mindedness in Science spreads across entire systems. |
| THE NATURE OF SCIENCE—WHAT YOU NEED TO KNOW TO FOLLOW THE RESEARCH
Proof in Science is elusive. Even more than in the "core" sciences of biology, chemistry and physics, establishing absolute proof in medicine and Health is nearly impossible. The primary objective of research investigation is to determine only what is likely to be true. This is because research into Health is inherently statistical. When you throw a ball in the air, will it come down? Yes, every time. That's physics. If you smoke four packs a day, will you get lung cancer? The answer is maybe. |

| Furthermore, I have translated the Science into dietary recommendations that you can begin to incorporate into your own life. Not only will you gain a new understanding of nutrition and Health, but you will also see exactly which foods you should eat and which foods you should avoid. What you decide to do with this information is up to you, but you can at least know that you, as a reader and a person, have finally been told something other than hogwash.

Avoid codependency therapies, repressed memory therapies, and other dangerous "pop-psych" techniques that have no basis in Science or reason. Accept responsibility for your own Health and keep your body, and your brain, in good shape, by eating right, exercising, sleeping well, and following common-sense Health rules. If something goes wrong anyway, spend the time and money necessary to find a good physician who will uncover your problems instead of hiding them with drugs.
Above all, be a skeptic. Listen to your doctors, but don't assume that they're always right. |

The future of Health care was now firmly linked to the laboratory and Science. In addition, USP monographs, particularly botanical monographs, have to meet two criteria. They have to be supported by Science, and the medications must have proven efficacy. Unfortunately, most herbal medicines have not met the USP's strict requirements because peer-reviewed scientific results often are not available. |
| It is derived from the words ayus (life) and veda (knowledge) and is often translated as the "science of life." It is an in-depth Science of life and encompasses the wholeness of life. It aims to bring about a union of physical, emotional, and spiritual health—a state of harmony with the universe.
Ayurveda evolved more than three thousand years ago and was transmitted orally from teacher to disciple and eventually was written in Sanskrit poetry known as the Vedas.
The first major written classic of ayurvedic medicine contained the teachings of Charaka. |
| The former Union of Soviet Socialist Republics (USSR) assigned the Soviet Academy of Science to develop a product that increased the performance of their elite personnel, which included athletes, military personnel, political officers, and chess players, while adhering to strict Health guidelines. The Soviets' pursuit of superior military strength, performance in the Olympic
Games, political power, and the excellence of the well-known Bolshoi ballet mattered so much to them that whatever they could do to accomplish the goal of dominance was pursued. |
| Beyond Science, we have a belief that there is relevance to life and our existence and that there is interconnectedness between all living things. This belief applies to the herbs that we take, too. We take adaptogens to promote Health and prevent disease. The belief that the herbs may help contributes to their efficacy. As with all medicines, there is a significant mind-body connection.
Some skeptics suggest that the reason herbs work is due to a placebo effect. |
| When the analysis is complete, we hope both Science and tradition will prevail.
Brekhman and Dardymov's definition of the properties of adaptogens was made approximately forty years ago. The basic requirements of adaptogens have been kept the same until recent years, when new research and new interest has produced new interpretations of the original definition. Some of these clarifications and interpretations follow.
Adaptogens Are Nontoxic
Adaptogens should be nontoxic (not harmful). They must cause minimal side effects on physical or mental Health. |

The big problem we have is that there's no Science. It's all politics. It would be so nice if people just quieted down and said, 'Let's investigate this and find out what's going on.' Because the real enemy is not each other — it's the disease."
In 1993 the National Institute of Environmental Health Sciences described the concept of environmental control unit testing as the "single most important way to develop a reliable clinical approach to the diagnosis and evaluation of chemical sensitivities." But today, in this country, except for Bill Rea's ECU, no such facility exists. |
| Today she does research in environmental and occupational Health in the University of Texas Health Science Center's Department of Family Practice. And she finds herself one of the few mainstream physicians who is willing to take MCS seriously. As such, she's sick and tired of the enmity between the conventional docs like her and the clinical ecologists. "The name-calling and cross fire between the groups has been detrimental to the patients."
That is a shame, because the groping, unsettled search for MCS treatments simply reflects the nature of innovation and change. |
| That's very well known in the basic Science literature."
Ross also goes after what environmental docs — but not conventional physicians — consider one of the most common impediments to good health: Candida yeast. "Sometimes we'll measure antibody levels against Candida," he says. "That remains a controversial issue in medicine, the whole business of whether Candida yeast may not be the innocuous little creature medicine has always taught that it is. But we feel that in some patients it causes significant problems."
Finally Ross measures patients' levels of nutrition. |
| A Science fiction writer and founder of the religious movement (some would say cult) Scientology, Hubbard also was known for his work in drug rehabilitation. Rea's version of Hubbard's process is based on the premise that toxins accumulate in the body — specifically in the body's fat. If it were possible to reduce that accumulation, the result would be better Health. The idea of heat therapy, then, is to get rid of toxins by literally sweating them out of you.

| The rules are famous in medical Science as Koch's Postulates.
1. The microbe must be present in every case of the disease.
2. You must be able to isolate and cultivate it in the laboratory.
3. Introducing the cultivated microbe into a healthy animal must cause the same disease.
4. You must be able to recover the microbe from the animal and cultivate it again in the lab.
Failing any of these stipulations, a disease could not be said to be caused by a microbe. The postulates were, and are, an effective way to safeguard against false claims. |

Nutrition Science is gradually reaching a consensus that a low-glycemic diet, one with the least amount of trans fats as well as saturated fat, is probably preferable for long-term Health in many respects. Such a dietary pattern seems to lower the risk of diabetes and heart disease. Encouraging young people to adopt healthy dietary habits at a time when they would be motivated by the short-term benefit of clearer skin might be a good public Health strategy. Most patients seem to think that diet is important in treating acne, and they expect dietary recommendations from their doctors. |
| They anticipated that the best available Science would support their convictions that HRT had many Health benefits, far beyond simply easing hot flashes. Thousands of women were recruited to the study and randomly assigned to take either Prempro or a look-alike placebo pill.
When the results of this study—called the Women's Health Initiative (WHI)—were announced in 2002, many physicians were surprised and women were shocked to learn that instead of protecting women from heart disease and cardiovascular complications, HRT actually increased their risk. |
| In other words, Science, not supposition, is their motto. But when data don't match dietary dogma, they frequently are ignored. That's what happened with MRFIT (the Multiple Risk Factor Intervention Trial). Until the Women's Health Initiative, MRFIT was the largest (nearly 13,000 men were recruited) and most expensive ($100 million was spent) study of lifestyle intervention.
In the early 1970s, these men were divided into two groups. |
| Perhaps the most amazing thing about this "science fiction" is that it may be coming true. Scientists have found evidence that chocolate contains a number of compounds that can keep blood platelets from forming clots that may lead to heart attacks.
Some people find it hard to accept that chocolate could have Health benefits. Yet the evidence keeps accumulating. Researchers have found that dark chocolate lowers blood pressure and helps improve the response to insulin. |

Not only does optimism help prevent disease, but Science is discovering that it's a vital ally in the healing process. Conversely, a pessimistic attitude can seriously erode our Health. Detailed evidence supports the contention that optimists live longer, suffer from fewer and less severe diseases, and are much healthier than pessimists.2,3
What distinguishes an optimist from a pessimist is the way in which they explain both good and bad events. Dr. Seligman has developed a simple test to determine your level of optimism. Take the test to determine your own level.

As Science continues to confirm the Health benefits of a fresh, natural diet, we've also learned that the way we eat these foods affects their benefits. The idea of food synergy is one that is not always talked about but is an important concept. For example, natural flavonoids found in certain foods can allow greater protection against cancer when ingested together than when taken individually. One specific instance occurs when you take the compound sul-foraphane and the flavonoid polyphenol apigenin at the same time. When taken together, they are twelve times stronger than when ingested alone. |

Some researchers believe that cooking or other preparation of garlic and onions greatly reduces their potential in helping your immune system, so a better solution is to use these vegetables raw.
For those not wanting to have the odor of garlic on their breath, an alternate source that is sometimes recommended is the "odorless" garlic tablet which can be found in many Health food stores. |
| That said, those who venture into this territory of alternative medicine should do so with the understanding that the "science" behind the traditional explanation of how it works is seriously flawed.
Additionally, if Western researchers are correct in their suppositions about how acupuncture works, then you would be well advised to limit its use, employing it as a pain killer rather than as a potential cure to the many diseases that traditional practitioners claim it is capable of handling.

| Many modern chiropractors have realized that the basic premise of their Science is somewhat flawed or, at best, incomplete. Consequently there are few chiropractors who practice the "pure" Science of decades ago. Instead most mix spinal manipulation with recommended lifestyle changes in regard to exercise, nutrition, and sleeping habits. Most also stress preventive measures for remaining healthy — thereby offering information that many mainstream medical doctors only give the briefest of coverage at best. |
| Although it appears to work for many patients, the basic "science" is obviously flawed with no correlation between the body and its functions as described by acupuncture experts and Science.
According to traditional acupuncturists, Health can only be realized when there is a balance between the opposite forces of yin (the spirit) and yang (the blood). These two forces interact to create a third energy known as qi. Qi, the theory goes, flows through surface channels (called meridians) to all parts of the skin and into the internal organs. |
| But they do offer something besides the medical dead end many patients come to when medical Science can no longer help them.
Growing, Growing
In a capitalistic society, when one service becomes too expensive or otherwise unattractive, alternate services grow to fill the new market formed of the disenchanted, dissatisfied, and poor who no longer want to pay for the old services. This is currently happening with mainstream medicine. As it becomes more expensive and less personal, more and more people have started looking at other ways to get their Health needs met. |

As you can see, my program is nothing more than, as I've stated, good Science and good sense.
There is nothing very difficult about the program. If you're already pursuing a healthy lifestyle, you may not have to make many changes in the way you live.
If you do need to make substantial changes, though, don't be discouraged. You'll notice the benefits almost immediately. Your mind will become clearer and more powerful, your general mood will elevate, and you'll begin to glow with energy. |
