Mushrooms (Shiitake, Maitake, and Reishi)
Although numerous types of mushrooms provide wonderful tastes, textures, and healthful properties, these three mushroom superstars have been recently receiving widespread attention due to their Health benefits and, as a result, are increasingly available:
• Shiitake (Lentinus edodes): These have fleshy, brown, slightly convex caps that range in diameter from about 2 to 4 inches. |
| Most pesticides in use are synthetic chemicals of questionable Safety. The major long-term Health risks include the potential to cause cancer and birth defects, while the major Health risks of acute intoxication include vomiting, diarrhea, blurred vision, tremors, convulsions, and nerve damage.
The evidence for the cancer-causing capabilities of pesticides in animals is inadequate, and the formal opinion of many "experts" is that they pose no significant risk for the public or the farmer. |
| However, if saccharin poses no benefit to Health, as studies have shown, and there is a cloud of doubt that hangs over its Safety, why should it be used?

| Even though there is a worldwide standard for food irradiation Safety that was accepted in 1963 by the Codex Alimentarius Commission, a joint body of the U.N. Food and Agriculture Organization and the World Health Organization, our feeling is that the science conducted so far on food irradiation is far from complete. In other words, we question how there can be such a strong position on its Safety without a more complete evaluation.
One of the real concerns about food irradiation is that it might be used to mask poor sanitation practices in food production. |
| A less serious Safety issue with most nuts and seeds is that they provide a high ratio of arginine to lysine. While arginine does provide significant Health benefits, a high arginine-to-lysine ratio is best avoided by individuals susceptible to cold sores or herpes infections, as arginine promotes, while lysine prevents, the activation of the virus.
Finally, another Health risk with nut consumption is the fact that the most popular commercial roasting process of nuts is a form of deep-frying, usually in saturated fat such as coconut oil or palm kernel oil. |
| However, these studies fail to make a strong case that eating farm-raised fish poses a significant Safety concern. To ensure the Safety of the food supply, the FDA has studied PCBs and set limits for tolerable levels that are not associated with risks to human Health. For fish, the tolerable level of PCBs is millionths of a gram (parts per million, or ppm). At 0.056 part per million, the level of PCBs found in farmed salmon is still V35 the unsafe level of 2.0 ppm.
The reason that farm-raised fish have higher levels of pesticides appears to be the type of feed they are given. |

One work-around for this is to add weights to your ankles, legs, and waist so you're moving more and working harder. However care needs to be exercised in doing this since it is possible to put enough strain on your wrists with weights to cause some strains or other damage. j
