| Research volunteers ate a daily dish of tomato paste and olive oil for 10 weeks. They got 16 milligrams of lycopene per day from this mixture. Other volunteers were given olive oil, but no tomato paste or lycopene.
Lycopene-eating volunteers showed 40 percent less sunburn than the other volunteers after week 10. The lycopene may have helped the skin defend itself against UV damage — and maybe fend off future wrinkles and skin cancer, too.
Just remember - this protection takes time to kick in. Lycopene eaters didn't see any skin protection until week 10.

There were no differences in the percentage of volunteers who became infected in the echinacea group (81%) vs. the placebo group (85%) or in other laboratory measures of infection. Other studies, which grew Streptococcus mutans (the bacteria responsible for dental plaque) in the laboratory, confirm that green tea polyphenols inhibit the growth of this cavity-causing bacteria.9

The defenders of MSG safety frequently cite a study in which human volunteers were fed large doses of MSG combined with a mixed meal of protein and carbohydrates. Only 10 percent developed a headache. Most were unaffected. But when the study was repeated using 14 human volunteers, this time keeping the subjects without food overnight, all developed headaches, tightness in the chest, and other symptoms of neurological toxicity related to MSG.
