Mannitol contains fewer calories than sugar, and can be eaten by diabetics. Previous methods of synthesizing mannitol were only successful in converting 25 percent of corn syrup to mannitol, while the ARS's method used bacteria to convert 72 percent. Experiments in converting sugars and other materials to mannitol using this method were also successful.
